Macayo’s Mexican Grill & Cantina recently remodeled and revamped its famous menu. Come and enjoy an exciting tequila dinner at 5:30 p.m. Wednesday, Feb. 3.
The special event will be hosted by consultant chef, Eric Justice and Fortaleza tequila. Director of Marketing and Brand Management for Macayo’s, Ashley Negron explains, “Eric is one of the chefs that we worked with to create the Scottsdale test-kitchen menu. He will be flying in from Texas to work with us on the next phase for the test menu and to host the tequila dinner.”
As the founder of Remarkable Culinary, Justice takes on engaging, enterprising and diverse consulting projects; with companies committed to doing great work. He earned his bachelor’s degree in Business Administration from Sam Houston State University before embracing his passion for cooking and enrolling in Le Chef College of Hospitality in Austin.
Justice’s knowledge of French Cuisine was cultivated during extended stays in the world-famous kitchens of Lyon. He practiced under the tutelage of Chef Guy Gateaux at Le Bistrot de Lyon and Chef Jean Paul La Combe at the legendary Leon de Lyon. After earning his culinary arts degree in 1993, he moved to Chicago and developed a group of Cajun restaurants called Redfish Looziana Roadhouse. The first of many stops around the country honing skills and relationships in many great companies and cuisines including: Pappadeaux Seafood Kitchen, Pappas Bros Steakhouse, Samba Room (Hot Concept of ’99), Mignon, Timpano Italian Chophouse, Bugaboo Creek Steakhouse, Pei Wei Asian Diner, and PF Changs China Bistro.
With over 30 years in the business, he has assembled an arsenal of talented people to partner with in creating great brands. As an independent restaurateur, Justice plays with noted brands: Chicken Scratch/ Foundry, Ascension Coffee, Foosia Asia Fresh. Justice also created award-winning Mexican Sugar Cantina and Cocina, and craft burger spot Spork in North Dallas.
The layout of the tequila dinner will include a cocktail hour starting at 5:30 p.m., with dinner to follow around 6 p.m. The dinner will include a four or five course meal including carefully selected tequilas paired with each course. Negron says, “Fortaleza Tequila will be the co-host for this event as well. They will provide education and tasting on their different tequila marks before each course.”
