How does an acclaimed Scottsdale restaurant transition say goodbye to its summer cocktails? With a Batch Burning, of course.

For one night only, the cocktail program takes center stage at COURSE, the acclaimed restaurant from Chopped champion Chef Cory Oppold. Resident mixologist Justin Chard is stepping in to lead this spirited send-off to summer. From 7 p.m. to close on Sun., Oct. 5, Chard will be pouring the final rounds of COURSE’s innovative summer cocktail lineup. Guests are encouraged to stop by to enjoy the creations for the last time.

“Our Batch Burning nights are how we say goodbye to our current menu,” says Chard. “We make a night of it, celebrating our industry friends, and it also gives people around town a chance to try our cocktails without sitting for the full tasting menu at COURSE. It’s become our way of ending each menu cycle and bringing the community together before the next one starts.”

Chard, who joined COURSE in 2024, is know as a boudary-pushing mixologist. The cocktails all tell a story, rooted in food, not just alcohol.

The summer cocktails for the Batch Burning include the Motherboy XXX with Blanco Tequila, Mezcal, Chareau, Melon Liqueur, Xtabentun, Cocchi Americano, Peach Tea, Eucalyptus Tincture, Agave, Salt, Citric Acid, and Rhubarb Confit; the Seward with Strawberry Greek Yogurt-washed Vodka, Almond Butter-Washed Rum, Tanqueray Sevilla Orange Gin, Coconut Liqueur, Clarified Passionfruit Juice, Clarified Tomato Water, Salt, Sugar, Citric Acid, and Salted Tomato Pearls; and You’re a Crook Captain Hook, with Mint Oleo-washed, a Blend of Rums, Clarified Lime Juice, Salt, Water, Co2, Skeleton Leaf and Mint Oil Spritz.

No reservations are needed and each cocktail is $12. There will also be $12 fired chicken sandwiches available.
