Tommy Bahama is celebrating its "Summer of Gin" and one of its newest additions is its "Permanent Vacation."

In June and July, all Tommy Bahama Restaurant & Bar and Tommy Bahama Marlin Bar locations will be celebrating all things gin by serving the Strawberry Fields of Summer (strawberries, basil, Tommy Bahama Island Gin, lemon juice, simple syrup, and soda water; $15), the Ambrosia Fizz (Hendricks Orbium, St Germain, lemon juice and simple syrup, topped with Prosecco and a splash of Aperol; $15.50), and the Permanent Vacation (Botanist gin, fresh watermelon purée, tangy lime juice and mint syrup, then finished with a dash of Aperol; $15.50).

Why gin?

“We’ve found that summer is an amazing season to put gin at the forefront; we really lean into flavors of the season like strawberry, rhubarb, watermelon, and herbs like mint and basil. For example, a new edition to our Summer of Gin lineup this year is the Permanent Vacation," explains Rob Aspaas, director of cocktail for Tommy Bahama. "We really enjoyed putting this cocktail together because it ties an incredibly smooth gin with the seasonality of watermelon and mint, with a hint of bitterness coming from Aperol. It’s just one example of playing to the spirit and the season!”

Ingredients

1.75 oz Botanist Gin

1.5 oz Watermelon Purée

1.0 oz Lime Juice

0.5 oz Aperol

0.5 oz Mint Syrup (Mint Syrup instructions: 2 parts of water, 2 parts of sugar, 0.5 oz of mint)

Instructions

Add all ingredients into a mixing glass then add ice. Shake 10 times, double strain into a Collins glass with fresh ice.
