Wine and Dine Time

SWB, the southwestern bistro at the Hyatt Gainey Ranch puts Latin flair into Southwestern cuisine with the launch of its new daily menu and Wine and Dine Program.

While many resort restaurants offer wine dinners sporadically throughout the year, SWB is the only one that offers a wine paired, custom created dinner every night at 6 or 8 p.m.

Seated at the bar overlooking the open chef’s kitchen, up to six lucky diners at each sitting enjoy a chef-selected four-course meal and wine pairings. The atmosphere is fun, and interaction between the chefs and your fellow diners is encouraged.


Being a pescatarian, SWB wove a meal around seafood offerings when I went on a recent visit.

Dinner began with a spicy shrimp appetizer on a bed of green papaya slaw. Instead of a wine pairing, the dish was accompanied by reposado tequila. The smooth complexity of the spirit elevated the dish.

The next course was a very southwestern style cream of corn and poblano soup. The decadent soup was very rich and the Santa Margherita Pinot Grigio paired with it got a bit lost.

The main dish were perfectly cooked succulent scallops that worked in tandem with the minerality of the Emmolo Sauvignon Blanc.

The meal concluded with a sinful chocolate mousse cake featuring single origin Mexican chocolate, milk chocolate on a chocolate almond cake. A glass of champagne, the perfect pairing with anything, rounded out the Wine and Dine experience.

The new standard menu at SWB features products sourced from local farmers, dairies and ranchers. There are several vegetarian, vegan and gluten free options including the gluten free pork belly taco appetizer, the vegan quinoa and arugula salad and the gluten free short rib adobado entrée. Other highlights of the reimagined menu include the Aguachile, a yellowtail and octopus ceviche-style appetizer or the free range chicken with a mole rojo, cactus escabeche, cancha and chochoyotes.
