FIRST COURSE Pan seared sea bass with a mango habañero glaze over a bed of herbed farro. PAIRED WITH SUNSHINE DAYDREAM SECOND COURSE Porcini mushroom + ancho chile rubbed smoked beef tenderloin with a sweet onion jam on a bed of rainbow chard. PAIRED WITH SAISON BARBERA THIRD COURSE Chipotle glazed pork belly with a pineapple reduction over creamy jalapeño polenta and served with sautéed heirloom vegetables.
